Frugal Friday - Leftovers



Try to use leftovers in a completely different way for a meal so you don't get tired of the same ol' same ol'.  For instance, we have leftover ham from Christmas so I am making a ham casserole this week, along with having ham sandwiches for some lunches.  I have several different recipes I could use if I need to use up more ham.  If I don't want to use it all now, I chop it up and put 2 cups portions into a ziplock and freeze for a later time, when we're not so tired of ham.

If you have lots of chicken or turkey, make Chicken Roll-Ups, the chicken needs to be cooked before you put it in the roll-up anyway.  Or make another Chicken Casserole where the meat is supposed to be cooked and cut-up already.

You'll be surprised at how this stretches your food and makes it more interesting to eat leftovers.  In fact sometimes, I now cook extra meat just for this purpose!

That is a great goal! I would love to hear more tips on how you use your left-overs. I find at my house if I call them re-runs instead of left-overs, my family eats them more willingly! I hope you have a blessed New Year!

I have to be super creative in leftover usage - hubby does not care for casseroles (lasagna is as casserole-y as we get in my house!) so I have to really work at it.
