Pork Chop Bake

From: From Mother's Cupboard


6 pork chops 
6 potatoes, peeled and chopped
6 carrots, halved and chopped
1 med onion
mushrooms, optional
Gravy:
Chop drippings 
1 can cream of chicken soup, diluted with 1/2 can water


Brown chops and sprinkle with salt and pepper. Make a layer of potatoes, carrots, onions, and mushrooms on the bottom of a casserole dish.  Sprinkle with salt and pepper.  Lay browned chops on top.  Make gravy and pour over all.  Bake at 350 degrees for 50 minutes.  


We did this in two different 13x9 pans, it worked much nicer than one casserole dish.  Simple and delicious!!!
