Bisquick Baked Chicken





This recipe did come off the back of the Bisquick box, hence the name I've given it.  It is, however, some of the tastiest chicken you will ever find!  It's not fried and I take the skin off my chicken first and so that helps make it a bit healthier. 

1 T.  butter or margairine
2/3 c.  Bisquick (or equivalent) mix
1 1/2 t. paprika
1 t. salt
1/4 t. pepper
3 - 3 1/2 lb. chicken

Heat oven to 425*.  Melt butter in 13x9 glass baking dish in oven.  Stir together Bisquick mix, paprika, salt, and pepper.(I mix together larger batches and store in plastic containers for next time, I only scoop some in a bowl and cover my chicken in there, I don't know how much I use for sure)  Coat chicken.  Place in heated dish.

Bake 40 minutes.  Turn chicken, bake about 20 minutes longer or until juice of chicken is clear when thickest piece is cut to the bone. 

*I've altered the baking times because my chicken was never done with their times and I also altered a few ingredients to suit our family.

This looks so good. I always prefer to bake my chicken, fried is just too greasy for me (and not healthy), I will have to give this a try, usually I use panko breadcrumbs. Never tried the bisquick! Thanks

Denise, While I completely agree with baking be better for us (and still tasting great), it's so much easier too!!!
