Frugal Fail - Dusting Myself Off!

Don't Panic - Dinner's in the Freezer: Great-Tasting Meals You Can Make Ahead
Last month I experimented with freezing the main components for my meals.  I absolutely LOVED it!  With homeschooling, I'm very busy and meal times can be hard to get to the table on time.  I don't love casseroles.  I'll eat a few casseroles per month, but not usually more than once a week.  And so in the past when I've tried freezer cooking, I've failed.

I've been doing batch cooking and I love it because it was cooking several meals at one time, so you're getting meals in the freezer for when you're too busy, but you don't need to spend all day in the kitchen.  I will continue batch cooking, but this past moth I knew I needed a little more of a kick in the pants!

I decided to take my meals and freeze the major components, i.e. homemade pizza - froze the dough and hamburger.  Any meal that needed fried hamburger I fried it and bagged it.  It shaved quite a bit of time off.  I was able to get supper on the table at a decent time.

So why, you ask,  the frugal fail?  Well, last week I was down to mostly meals that didn't get made ahead of time and still need more prep.  So... we ordered Chinese and Pizza that week.  It didn't help that we had to leave several times especially through supper time so our schedule was messed up, but if it had been mostly prepared it wouldn't have been a problem.  (I justify this with, we haven't done this in a REALLY  LONG time!!!Tongue Out)  But, that's still a fail.  I know better, obviously!

So I've decided to hop back up and dust myself off and learn from this.  I've got my menus made out last week I did a bit of  Freezer Cooking.  I'm trying to be prepared  to have supper running smoothly again!  My family will appreciate this weekend while I'm gone to a homeschooling conference!

I also found a Fabulous Book for someone like me who wants variety in the freezer:  Don't Panic Dinner's in the Freezer.   I'm giving one book away to one of my lucky readers so make sure you check it out here.

Awww, don't kick yourself! Just consider the take-outs a special 'treat.' What's wrong with doing that every once in a while? It's the big picture that counts!
BTW, I like to prep my 'main ingredients' as much as possible, too. Can anything be nicer than taking already-browned ground beef from the fridge to make spaghetti sauce? When you are tired, even that 10 minutes you saved makes a big difference.
