
I already have some great rhubarb coming up in my garden, so I thought this would be a great time to share my family's favorite recipe!
Crust:
1c. flour
1/4 c. sugar
1/2 c. butter or margarine
Mix flour, sugar, and butter. Pour into a 10" greased pie plate. Set aside.
Rhubarb Layer
3 c. fresh rhubarb, cut into 1/2" piecies
1/2 c. sugar
1 T. flour
Combine rhubarb, sugar and flour. Toss lightly and pour into crust. Bake at 375* for about 15 minutes.
Cream Layer
12 oz. cream cheese, softened
2 eggs
1/2 c. sugar
Beat together cream cheese and sugar until fluffy. Beat in eggs one at a time. Pour over hot rhubarb layer. Bake at 350* for about 30 minutes or until set.
Topping
8 oz sour cream
1 t. vanilla
2 T. sugar
Combine and spread over hot layers. Chill.

This looks not only super simple to make but super delicious to eat! My stomach is growling. I'm a huge fan of rhubarb and usually have a fresh rhubarb strawberry pie from my parent's garden every year. We should stitch it up and try this this year!
