Zucchini Bread


My zucchini got a little bigger than intended!  While I can't use it for a side of vegetables, I salvaged it by making some of my famous Zucchini Chocolate Cake and Zucchini Bread.

Here's our favorite recipe:

3 c. sugar
4 eggs
1 1/2 c. oil
2 t. vanilla
2 c. zucchini, peeled & shredded
4 1/4 c. flour
1 1/2 t. salt
1/4 t. baking powder
1 1/2 t. cinnamon
1 1/2 t. cloves
1 1/2 t. ginger
nuts (optional)
raisins (optional)

Stir together the first five ingredients.  Stir together dry ingredients and mix.  Bake at350* for 1 hour.  Makes:  2 loaves
